Thriving in Turbulent Times: How to Remain Unshaken as a Godly Woman

We can all agree that we are living in times where the economy is uncertain and or challenging. If not carful it's easy to feel overwhelmed and uncertain about the future. As believers we must not look at what is going on around us but to find strength and hope in Christ, knowing that our security ais not determined by worldly circumstances. I pray in this blog you will be empowered to push through in the midst of turbulent times, because God enables us to remain unshaken.

In Psalm 46:1-3 (KJV); the writer talks about how we are to anchoring our trust in God: It doesn't matter what economic uncertainty is going on. It doesn't matter if the gas, interest, food goes up, our trust in God becomes vital. Psalm 46:1-3, assures us that God is our refuge and strength, a present help in times of trouble. When we have an anchor in Christ we find peace and security, knowing that He is in control of every situation.

Psalm 62:5-8 tells us that God is our rock, a refuge, and our salvation. We shall not be moved but we are to trust in Him at ALL times. Not just sometimes, but at all times. Far to often people try to make things happen because of fear when Jesus tells us in Matthew 6:25-34 not to worry about our basic needs but to seek God's kingdom above all else. When we align our priorities with His and seek FIRST GOD'S KINGDOM, we can experience His provision and peace. Didn't Jesus say in Philippians 4:19 that God will supply all our needs according to His riches in glory. I get it, it's not easy sometimes especially if you have children and want to ensure they have what they need. God has always provided for my family and has never failed us! Rest in the Lord knowing that you have the assurance and security in Christ not the economic circumstances. By anchoring our trust in God, seeking His kingdom, finding contentment in His sufficiency, and cultivating a generous heart, we can thrive in even the most challenging times. Our faith empowers us to remain unshaken, trusting that God's provision and guidance will sustain us through every season of life.

I leave with you a quick dinner idea for busy moms. Now....I'm plant based but my kids aren't there just yet :). So here is an idea for you busy moms! Enjoy! One-Pan BAKED (healthier version) Lemon Herb Chicken with Roasted Vegetables

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 pound baby potatoes, halved

  • 2 cups broccoli florets

  • 1 cup cherry tomatoes

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).

  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, dried thyme, dried rosemary, salt, and pepper. Mix well.

  3. Add the chicken breasts to the bowl and coat them thoroughly with the marinade. Set aside to marinate for about 10 minutes. (I usually marinade overnight to make sure the seasonings gets in the meat)

  4. In a large baking sheet or roasting pan, arrange the halved baby potatoes, broccoli florets, and cherry tomatoes. Drizzle with olive oil, salt, and pepper. Toss to coat the vegetables evenly.

  5. Place the marinated chicken breasts on top of the vegetables in the baking sheet.

  6. Bake in the preheated oven for about 20-25 minutes or until it's fully cooked. I put aluminum folder over to make the chicken tender. The time for cooking will depend on the size of the chicken. The thicker the longer it will take. Whatever you do please make sure the meat is fully cooked.

  7. Once cooked, remove from the oven and let the chicken rest for a few minutes.

  8. Serve the lemon herb chicken alongside the roasted vegetables for a delicious and nutritious dinner.

Note: Feel free to customize the vegetables based on your preference or what you have available in your pantry. Other options include carrots, zucchini, bell peppers, or asparagus.

Enjoy this quick and easy one-pan meal that will save you time in the kitchen while providing a wholesome and flavorful dinner for your family. You don't have to cook the veggies with the chicken. I usually cook them separate and cook the chicken by itself and then put them together when done. I want to make sure the chicken is fully cooked and it doesn't take long for the veggies to cook.
